Bakersfield, CA, 03-29-2013 F:  Aloha, happy Good Friday, I am glad to be here and want to extend you my best wishes on this start of the final three days in the life of Jesus Christ.  I realize that a lot of people “get offended” over the mention of Christ to which, I say “bah, humbug,” without the Lord in my life, my life would be for naught, it is important for anyone coming here to Hawaii to understand that we take religion here very seriously.  The fact that more and more mainland liberals continue coming here, at some point, the faith of the people might disappear.   I cannot tell you how important it is to have faith in these times as the number of changes coming in less than one year is going to swamp us like a tsunami.  It is amazing to me how suddenly, all of these warnings about what’s to come with the advent of Obamacare is going to be extremely difficult, why did these people not warn us much sooner than now?  Now, when the bill is law and every day it comes more and more into our lives and the changes coming in the workplace are going to be like none of which, we have ever seen before.   People continue going to the management and to the head chefs asking if their healthcare is going to be “free,” and we tell them—to the contrary—that what’s coming may cost them their jobs!

In Hawaii, I predict there is going to be widespread devastation when this law comes into effect on January 01, 2014 because in the islands, if you look at the Maui News online or the Honolulu Advertiser, the pay scale for the average job is not much different from what one finds here in California.  Yet, the cost of living is so much greater, which means that the local folks tend to live in multi-generational families, in homes in which, they can add a cottage, another room, or a second story.  Kahului is typically, where one finds the bulk of the Locals although the west end around Lahaina has quite a few, too.  Kihei also has some but most live in the central portion of the island or upcountry where land is a bit cheaper.  However, the impact of healthcare reform is going to trash our communities and the only people who can afford living here are the—wait for it!—the evil wealthy!  However, the lolo-heads do not seem to understand that it’s the wealthy that provide them their jobs along with the entrepreneurs coming from the Mainland but they want to do away with them.

Let me speak to those out there in both the islands and on the mainland that it’s the wealthy that are going to remain, as will the poor, it’s the middle class that is being done away with in much the same way as the deceased Venezuelan thug friend of Mr. Obama, Hugo Chavez, did away with his.  This is what is coming to all of us who believe in a free market, capitalistic system, it’s going to come like a shock and the people who took to the streets protesting in favor of free healthcare ala Obama who are going to be down for the count.  Times are bad and are becoming increasingly worse and it breaks my heart to see the people and the islands I so love being taken advantage of, it’s dreadful!

Therefore, I attempt to explain to my employees what is going to happen and the feedback I get is that it’s MY fault that they are going to lose their jobs, NOT the policies imposed upon us by the first Hawaiian president.  All I can do is to steer them in the appropriate direction and to begin counseling them on what to expect and what—if anything—they can do about it.  Personally, I think the Maui duck is cooked, it’s over, it’s done, the time is coming when moving to the Latin American nation of Belize or the Central American nation of Costa Rica is looking so much better.  The good thing about Belize is that the people speak English there, land is available at decent prices, and there’s always room for entrepreneurs opening businesses.  Moreover, the climate is similar to Hawaii’s in many ways so I do believe it is something I definitely am going to look into, the time is rapidly coming when all of us are going to have to move.   The creeping tide of unrestrained liberalism is sweeping the world and it’s not for the best, I assure you.

Well, it’s Good Friday, I don’t want to keep busting your chops on the “end of the world theme” so we must take some time off, prepare for Easter Sunday and move on before we wear the low information voters out.  In Hawaii, we enjoy our kau-kau, you know, our pupus, our grinds, whatever you want to call the foods we eat.  Our sauce for today is Chinese-Hawaiian Barbeque Sauce, a hybrid of delicious flavors yet simple to make.   Please, come on along and join me as we make this simple yet excitingly delicious sauce, it is one for the books and one that is going to make you famous among your peers and your clientele.  Use it for virtually everything—except breakfast dishes, of course!—and it will pay you back and then some!  Here we go:

(#0373) CHINESE-HAWAIIAN BARBEQUE SAUCE

 


Barbeque sauces come in many forms and in oriental and Hawaiian cooking, they are essential.  This one is the perfect sauce for a wide variety of Chinese and Hawaiian dishes and makes shellfish, pork, poultry, and ham come alive.  This is a definitive sauce, one that every chef working on the West Coast and around the Pacific Rim needs to have in his or her repertoire of sauces.
Yield:  about 1.5 quarts / Mis-en-place: 20 minutes:

Cornstarch slurry as needed
 

 


Method:

1.     Mis-en-place: have everything ready with which to work!
2.     In the top of a double boiler placed over hot water, combine the ingredients with the exception of the cornstarch slurry.  Bring the mixture to as hot a temperature as you can, taking care to whisk it frequently so the sugar dissolves.  Check the flavor but note, this sauce is pretty basic and is used for dipping, basting, or in stir-fries.   As it becomes hot, begin whisking in the cornstarch slurry allowing the sauce to tighten to medium thickness.  When it is thick, allow it to simmer over low flame for the flavor to develop. 
3.     After 5-10 minutes, check and readjust the flavoring as necessary and if need be, increase the salt but take care not to overdo it.   The sauce is now ready to transfer into a container for use on one’s steam table or if to be used later, pour it into a shallow pan placed atop a cooling rack.   Reduce the temperature to 45°F or less as quickly as possible so whisk it frequently allowing retained heat the opportunity to escape.
4.     As soon as the sauce is at or below the required temperature, spray a sheet of wax paper with CRISCO Pan Release and then press it atop the cooling sauce—sprayed side DOWN—so an unsightly skin does NOT form.  Place the pan inside the refrigerator taking care to ascertain that airflow exists on all sides.  As soon as it is cool enough to transfer into a sanitized airtight storage container equipped with a tight-fitting lid, do so and then label, date, and keep under refrigeration at ALL times.
5.     To use the sauce, return it to 165°F or higher in the top of a Bain Marie and never under any circumstance return used portions to the parent batch as this raises the possibility of the formation of foodborne illness-causing organisms a chance to multiply.  Always place leftover used amounts in separate containers and use them before using the parent batch.  After ONE reheat, toss any leftover amounts out and note—the shelf life for this sauce is 3-5 days.  
This is an essential sauce used in all oriental and Hawaiian kitchens and is perfect for dipping shrimp, shellfish, pork, ham, and poultry.

          Friends, have a great Holy Weekend culminating in Easter Sunday, as Christians, we need to uphold our traditions, holidays, and our religions against this tide of rampant, overpowering liberalism.  Having grown up in a liberal bastion since its inception, I never thought much about it until this past presidency and now, I am very afraid.  We need to do something to wake our nation up because I think when the Affordable Healthcare Act goes into effect, the blowback is going to be enormous and the November Mid-Term election is going to be a violent tidal wave of angry people.  I am trying to figure in my mind exactly HOW Mr. Obama can avoid being impeached because what a way to go out, the last two years with a Republican House and Senate overturning one law after another.  The time is coming when the low information voters will wake up and that means those in Hawaii, too. Something has to happen, our nation is spiraling out of control, look at that poor woman in Georgia where the punks attempted to rob her and ended up shooting her baby dead—what the hell is going on in the nation and the world!  We must bring God back into the public discourse and to do something with all of these lost souls roaming the earth, times are changing for the worse.  God bless you all!
