Bakersfield, CA, 02-25-2013 M: I am back after having been off for the past six months and you know, sometimes that is a problematic thing to do, I am busy with my business and lo and behold, one of the office staff sends me an email telling me I need to be here the following week!  I cannot pretend, however, that I do not keep track of time, I pay attention to the ongoing discussion taking place here at the American Institute of Culinary Politics-Elemental News of the Day because, let’s face it, the news one needs to know takes place here and nowhere else.  Sure, you can read newspapers, read magazines but let’s face it, more and more print media outlets are giving up the hard copy in favor of digitized media; however, since that is what we have been doing since our inception back in 2009, we feel that we are the best at what we do. That means, you need to take advantage of it because we are not going to lead you astray, no matter our political philosophy, we tell you like it is.   
I know that the new policy here at the blog is for each author to identify their political allegiances as we tend to get pretty mouthy over the course of our week here in Oildale, California.  It is true, there are more conservative voices here than liberal but even conservatism has its offshoots, which takes in a wide variety of different political ideas.  For instance, I belong to the Libertarian Party of the United States, yes, it is a political party that has only so many adherents but truth be told, and it is growing all the time because we encompass more ideas than does the parent party, the Republicans.  Now, unfortunately, I have to hold my nose and vote Republican on most occasions but that is what one must do when one is at war with the far left of the country, the ruling party in power.  We take the conservatism of Ronald Reagan even farther, believing that every American should be sovereign over their own bodies, their own lives, and should be able to indulge in whatever they want to do lest it infringe upon another’s freedoms.  We believe in the Fourth Amendment rights to be secure in who we are without having anyone tell us how to behave, how to act, or what to do if it goes against the grain of who we are.  We have the right to privacy, without interference by government because a government that has the power to give us EVERYTHING also has the power to take all of it from us!  Do not think for a moment that if the government gives you your medical care that it cannot take it away from you if it so chooses.  People need to use the minds given them by God and use their common sense before they sign their names on the dotted lines giving government control over not only their lives but also the lives of their spouses, their children, their parents, over everyone of any importance in the lives of the common individual. 
Over the course of the rest of this week, we are going to discuss these ideals because if we do not, I fear that too many of us are going happily to go down the garden path in much the same way that the Pied Piper led the rodents of each town out to their doom.  We cannot have a government so oppressive that it overwhelms our individuality, no one has the right, not President Obama, not Vice President Biden, not House Speaker Boehner, not Senate Majority Leader Reid, no one has the right to tell us what we can and cannot do lest it infringers upon the rights of our fellow citizens.  We do not believe that “victimless” crimes are just, we do not believe that Gays cannot marry, we do not believe that government has the right to either attack or support any religion, no matter what it espouses.  We are going to discuss this and more over the rest of this week and who knows, maybe I will gain some converts to the cause? After all, it is time the United States has a viable third party that can beat both the right and left and besides who among you does NOT believe that the Democrats and the Republicans are just offshoots on the same plant?  Both of them are practically the same, they just have some minor differences, that’s all, why not be a part of a REAL political movement, one that supports the freedoms of all individuals and the furtherance of all things humane?  Please, leave some comments, let me know how you feel, the time has come to commence a very important dialogue. 
Today, we pick up with the Salad Chef category, one not seen at the AICP-END since August 2012, sometime last summer.  I last was here in July of 2012 and the salads segment took place after I went back home.  I have never done this category before so I think you and I are going to have a great deal of foodservice fun.  Making salads is a great thing that far too many chefs and cooks tend to overlook when doing their menus and many times just settle for the same ol’, same ol’, just to have something there on their menu to which they can point when someone inquires about “salads.”  I, too, have not always been as excited as my fellows because all too often, we are looking for the coup de grace when it comes to menu items instead of taking great pains to make sure that every single offering is “five star” instead of less.  Anyhow, the salads we are making today and over the next six days are starter salads with personality, with flair, and with pizzazz, simple stuff but beautiful to behold.  Here is our first offering, Avocado-Tomato Salad:

(#1745-A) AVOCADO-TOMATO SALADS
 

Most chefs never care to make salads once they leave that phase of their training behind whereas I think salad making is one of the more important arts.  It is imperative that the salad chef has the proper training to know when their produce is at its prime, ready for making the best salads because most of the time; this is “free money” as the ingredients seldom cost very much and bring in maximum revenue.  This is a beautiful and tasty salad, very popular during the warm weather months but good at any time of the year.

Method:

1.     Mis-en-place: have everything ready with which to work!
2.     Remove the outer leaves of the iceberg lettuce and if unusable, discard them; otherwise, chop them with the rest of the lettuce.  Soak the lettuce for 30 minutes, then drain and spin dry in a salad spinner.  This is an important step and a salad spinner is an integral part of any kitchen so always use one as any sort of retained moisture upon the lettuce tends to cause the dressing to run off to the bottom of the bowl—not good.
3.     Hull the tomatoes and remove any blemished areas.  Then, using a sharp knife, slice them into sections.  If the inner part with the seeds is fairly firm, keep it; otherwise, cut it out and use in making tomato sauce.  Set the diced tomatoes aside until needed.
4.     Select avocadoes that are firm but not hard as rocks nor select ones that are extremely soft as those are destined for guacamole and nothing else.  A good avocado should feel like a baby’s hand, not squashy but soft nonetheless.  It is important to use ripe avocadoes but never ones with any blemishes or other unsightly marks.  Prepare them this way:
5.     Slice the avocado with a sharp knife from stem to tip and then all the way around so you can separate the two halves.  Then, using a soupspoon, lift the meat out of the shell, discarding the shells, and also remove the pits.  Hold each half down and slice in “fans” but not all the way through: leave it attached at one end so you can sort of “splay” them out like a fan. Sprinkle them with lemon juice and set aside for a moment.
6.     Using petite salad bowls, place the chopped iceberg lettuce in a mound in each bowl.  Then on one side, layer the avocado slices and on the other place the diced tomatoes.  You will see avocado fans and diced tomatoes on top resting atop a bed of freshly chopped iceberg lettuce.
7.     Douse the salads with dressings of choice.  In this case, we prefer Catalina dressing; you can either buy Kraft Catalina dressing or you can make your own or any other dressing for that matter.  Sprinkle the salads with freshly minced parsley, plant a sprig of parsley atop each one, then place each salad atop a doily-lined serving plate, and finally take them to the table. 
This is an easy yet elegant salad that most people love because of the delicious combination of flavors.  Avocadoes are a great fruit with which to work especially when they are at that perfect stage of their being when they are beginning to soften but have not yet turned to mush.  Try this one out when you need a quick salad and you will find that it achieves you maximum results, both in positive feedback and in your pocketbook.
