Bakersfield, CA, 02-12-2013 T: Yesterday, I made an outright accusation about the NFL Commissioner, Roger Goodell, accusing him of having something to do with the power outage that put half of the Superdome into darkness while leaving the other half partially lit.  I also speculated as to whether or not the halftime show put on by that ho, Beyonce might have had something to do with it, as well.  The reason I speculated about this is that we have not had a Superbowl blowout in many years, which is a plus for both the league and the fans as it also makes games more exciting and increases wagering and betting.  People want to see an exciting contest, they want to see their chosen team to have a fighting chance rather than seeing it concluded at the end of the first quarter, I understand that.  However, to make it so is not the right way to go about putting on the biggest show in sports because if it ever comes out in the same way that the Black Sox Scandal of the early 1900s, it can taint an otherwise lovely experience for decades to come. 

However, it seems very peculiar what happened on Superbowl Sunday, February 04, 2013, I instinctively knew that once the power went out and the longer it remained out that the Ravens would lose their momentum and possibly the game.  After watching the resumption of play and the 49ers quick two touchdowns, I knew I was right and the fact that the imbeciles around me in the downtown Bakersfield bars were going nuts was another sign that I definitely was right.  You see, had the 49ers won the game, they would have been ecstatic even though they knew it was falsely won, they certainly did not care!  They would have strutted around like the proud peacocks they are and would have bored everyone to death with how wonderful their young tatted-up quarterback Colin Kaepernick is.  Yet, you and I both know that they would have been wrong that the game—if not rigged directly by the NFL Commissioner himself!—was still thrown in their favor.  Moreover, they would have brushed aside any comments accusing them of direct or indirect complicity in the matter and would have laughed in the faces of Baltimore fans maybe even calling them “poor sports” and “bad losers.”

Thankfully, that is NOT what happened and the Ravens managed to recover and to win the “thrilling” game by fewer points than they would have had had the lights not gone out.  Therefore, let me mention how I hope this never happens again and what we can do about it to make sure there is never a repeat.  First of all, the main power apparatus of the chosen Superbowl site needs to be watched by federal marshals at all times and second, anyone caught tampering with the power or any other utility in any way needs to spend TWENTY years in prison, NO exceptions.  There should be NO appeals, there should be no time off for good behavior, and they must do the hard time in a place notorious for buggering inmates.  Third, if something like this should ever happen again, the teams must remain on the playing field and the coaches not allowed speaking with them either directly or indirectly.  Finally, should the power go out for longer than twenty minutes, the game needs to be called and whoever was ahead awarded the victory, only in this way can we ever prevent a repeat of what happened in Superbowl XLVII, something that should never have happened in the first place!

Now, I realize there is going to be a big outcry over my comments and people will bring up the fact that I am a moderate Republican and not a Democrat.  We all know that the Dems are always allowed to say and do whatever they want while the right side of the aisle is harried, pursued, and persecuted—that is never going to change.  I do believe that all of us share an equal portion of something like this and when people wager as much money as they do on professional sports, there has to be safeguards lest our sports betting becomes skewed as it is in something like say, African soccer matches where people end up killing one another.   The time has come when legislators on both sides of the aisle in both the federal and in state capitols stand together to ensure that our sporting events are free and clear of any hanky-panky reminiscent of the Watergate conspirators (there, you libs, I just threw you a ‘bone!’).   If we do nothing then you can rest assured that sports betting is going to go haywire and it will be like the good old days when the Mob fixed everything from boxing to pitching pennies, it will be all screwed up and no one will pay it any more attention.  I ask all of the people representing us in every form of government to press for these very much needed reforms and that should include all of the major sports bodies as if the fans no longer have faith in your product, think of the billions of dollars you are destined to lose!

Today, we are going to make another original muffin recipe, also in an institutional size, Orange Muffins with our very own orange filling.   One of the things professionals have going for them is the fact that we can buy what we need from professional foodservice purveyors like Sysco, S.E. Rykoff, and a whole host of other proficient food companies whereas you working at home or you working in a poorly-run foodservice operation cannot.  I know how it is to be working as a professional only to have a company that will not buy you the things you need to turn out quality products, let me tell you, it sucks when you are forced to work like a serf!  Yet, there are many foodservice operations that expect their personnel to make miracles out of little and that is why we are making today’s muffin recipe: Orange Muffins with Orange Filling. 

(#0003) ORANGE MUFFINS, ORIGINAL RECIPE—INSTITUTIONAL SIZE


Back in the day, bakers had to make their own fillings and flavorings much of the time and orange was one of the prime ones.  This recipe is one of the most beloved orange muffin recipes ever seen and I am sure that if you have both the time and the patience, you, too, are going to make a stellar muffin formula everyone in your place of business is going to love.  Take your time, do it right, they are truly worth it!

Method:

1.     Mis-en-place: have everything ready with which to work! Zest the oranges, and then peel all of the pith leaving just the fruit.  Pry out as many seeds as you possibly can then run them through a meat grinder or turn them into mush using a food processor.  Transfer everything from the bowl or the food processor to a heavy-duty saucepot and place over a medium flame.  Add the sugar, the orange juice, the orange emulsion, the Eggshade, and the salt and bring to a bubble; then, drop the flame to low and allow the mixture to reduce to a crusty orange paste.  Transfer this into a container and refrigerate until required in the recipe.

2.     Next, prepare your muffin pans by using ONLY reflective bakeware such as stainless steel or aluminum.  Spray the cups heavily with PAM Baking Spray or Crisco Pan Release spray or some such other food release spray. Then, line the cups with paper or aluminum liners, then spray both them and the tops of the pans heavily with food release spray, too.  This is important, as nothing is worse than muffins being torn apart when the baker attempts to remove them.  Set the pans aside.

3.     Preheat standard oven to 350°F or a convection oven—fan “off” for now until baking time—to 300°F.  Place a pot of water on the stovetop and bring it a boil—this is for filling empty cups in the baking pans and also to humidify the oven for TEN minutes prior to muffin insertion into the oven(s).

4.     Double-sift the first FOUR ingredients then stir in the required amount of—CHILLED—orange filling; set aside.  Hook up your HOBART mixer and equip it with the PADDLE attachment.  Add the eggs and the sugar and begin beating them together at medium-high speed until you CREAM the mixture: it is going to be emulsified, light, and yellowy; then, add the oil and continue beating it the mixture together for another 1-2 minutes and then stop.

5.     Add the remaining ingredients and mix well. Then, fold the DRY ingredients into the WET using the least amount of low speed mixer rotations.  The idea is to moisten the dry items with the wet but NOT to overdevelop the gluten contained in the flour.  If you mix the batter too much, the result is going to be a chewier product, not something; professional bakers want or do—BE CAREFUL!  Besides, lumps bake out during the cooking process so do not worry.

6.     Rest the batter about 20 minutes; then, using an ice cream scoop dipped in cool water, scoop the batter (after stirring it one last time with a rubber spatula to mix everything thoroughly!) into the prepared muffin pans close to the rims but NOT quite.  Let the pans rest for another ten minutes.

7.     Place a pan of hot water on the floor of the oven and allow it to steam up the inside of it.  If you have any empty cups in your muffin pans, fill them halfway with hot water.  When time is up, gently shake each pan to settle the contents, then place on the middle oven racks taking care to avoid the UPPERMOST and the BOTTOM of either a convection or a standard oven—it’s way hotter there!

8.     If using the convection oven, let the muffin pans rest a minute; then flip the switch to “ON” and bake either standard or convection for approximately 20-25 minutes.  At the earlier mark, test the middle rows for doneness by first touching them to see if they are SOFT and then if firm by inserting a paring knife or a cake tester into the middle of the center rows.  If it withdraws CLEAN, they are baked and ready to be removed and if not, continue baking another one-5 minutes.  Either way, KEEP a close eye upon them and if possible during baking, rotate the pans but if you think they are going to collapse, do NOT do it.  However, note that different levels may bake more quickly or not so pay close attention to them.

9.     When they are ready to remove, pull the pans out of the oven, place atop cooling racks, and cool them for 1-2 minutes; then, gently rap the pans to loosen the muffins and then depan them.  Leave them atilt in the muffin cups for another 1-2 minutes then remove them entirely and place them directly atop the cooling racks.

10. If you want to glaze them, do it now; otherwise, they are ready to serve.  Keep them warm in bun warmers or serve on serving trays accompanied by orange butter or whipped honey butter.  If to be used within the day, leave them out at room temperature covered by wax paper and if not, zip them up tight in Ziploc freezer bags, label, date, and freeze but use them within 3-5 days; after that, cut them up for use in orange bread pudding or toss them out and start anew.

These are the classic orange muffins, the best of the bunch and as timeless as is the art of quickbread and muffin baking, something to be both cherished and loved.  You are going to use this recipe so keep it nearby and note: you can buy minced orange filling from baking supply companies.

  Note—you can do the same thing with tangerines, limes, lemons, or any other citrus fruit that we did here today with oranges.  Not many chefs and bakers are making ‘tangerine muffins’ yet with help from the Torani’s syrups, which are available to us either through the beverage companies or a top-notch culinary purveyor, we can make a wide variety of excellent foodstuffs utilizing those very delicious flavored syrups!

          I mentioned yesterday how the drumbeat has commenced in regards to firing a radio host in your town of Bakersfield, California, Ralph Bailey.  This man is a dunce, each time I come to town to do my week, we have the “pleasure” of listening to him spew his idiotic self-absorbed idiocy on the radio and let me tell you, it gets old.  He could take some lessons from people we have on the radio here emanating out of Seattle and its environs.   One of the things that is so annoying is this constant talk of “black folks,” are we not all one ‘color’, sir, you know ‘people,’ and not colors?  Yet, the people who say they wish there was NO color are the ones constantly discussing the fact that there are differences between us based on color.  My opinion, as low value as it is, is that if we are ever to get past this past evil, that we need to eliminate all differences and just talk about the ‘American people’ as one single entity.  Please, join with the American Institute of Culinary Politics-Elemental News of the Day in forcing Mr. Bailey to be terminated and run out of town tarred and feathered and riding a rail.   Please, do the listenership a favor, AM 1560, get rid of this bumbling oaf and put Mark Levin in his place at 3:00 P.M.
