Bakersfield, CA, 01-25-2013 F:  Good morning, aloha, greetings, friends, here it is Friday, that leaves us but two days to go and then boom, I may not be back until July, August, or maybe even later!  One of the things about working here at the American Institute of Culinary Politics-Elemental News of the Day is that we are given policy issues compiled by the Board of Directors for us to disseminate around the globe.  These policies are ones that are for the local market of the original bloggers: Bakersfield and Oildale, Kern County, California.  Someone in the corporate office sends us emails telling us to mention this item of interest to the core group or that.  Today, we have several items of which to speak, the primary one being the BOD wanting AM 1560 Radio in Bakersfield PLEASE to fire Ralph Bailey.  Now, not knowing who this unfortunate person is, I listened to his show via the worldwide inter-web and was unimpressed thinking the man to be little more than a pompous idiot who thinks he’s an intellectual.  For three hours, this man goes on and on and by the time he’s done, he’s said nothing more than about 20-minutes’ worth of drivel.   One must wonder as to why a radio station would have such imbeciles during an important part of the broadcast day when all he does is harm the radio’s ratings and demonstrates his lack of intelligence.  I know that the older END blog on Choseit.com used to try to get Jaz McKay off the air but now they promote him to become a national show thinking that he is worth backing.  However, I must say that both of these radio hosts lack intelligence and would be unable to compete over here on Hawaiian AM or FM radio stations.   

There, the public service aspect of today’s blogpost is over and done meaning we can now move on to what I have in store for you today: more French toast.  We did French toast earlier in the week and today, are going to alter it to become Orange French Toast.  Orange is a traditional flavoring used in many preparations whether they be baked goods like muffins and quickbreads or in breakfast formulas like today’s item.  Most people love French toast and to tell you the truth, it is an excellent foundation for all manner of fine dishes.  With that said, let us commence today’s post and get it finished, friends:

Working in restaurants is a wonderful way in which, a regular line cook has the opportunity to learn a wide variety of different variations for normal everyday foods.  When one has the chance to work with different chefs from all over the nation and sometimes the world, one has the amazing ability to add a wide range of different formulations to their repertoire.  Take French toast for example: how many different ways are there to make this fabulous dish and yet, each one seemingly is different.  Once you taste this one, you will be a lifelong convert, it is that good!

Method:

1.     Mis-en-place: have everything ready with which to work! Have the bread ready, out at room temperature and make sure it is fresh! 

2.     Preheat griddle to 350°F or place 2-3 heavy-bottomed skillets atop medium-low flame.  Season the cooking surface with a towel or burlap dipped in vegetable oil and prior to use, spray it lightly with a good quality food-release spray.

3.     Using an electric mixer equipped with a WHIP attachment beat the eggs at medium-high speed until they are light and fluffy; then, add the heavy cream and half-and-half, blending well.

4.     Force this mixture through a fine-meshed sieve so that the egg whites or albumin is broken up and is NOT blotchy.  Nothing is worse than having blobs of egg white ruin the looks of the finished dish.

5.     Return the mixture to the mixer after wiping both the bowl and whip clean.  Add the powdered sugar, the cinnamon, nutmeg, and the extract and the emulsion.  Beat at medium high speed for 20-30 seconds then force the mixture through a wiped-clean sieve again into a large bowl; then, stir in the zest and set aside until needed.

6.     Test the cooking surface to see that it is WARM but not HOT.  Spray it with PAM or some such other food release spray then wipe the surface with the oily rag or burlap one more time. Preheat a standard oven to 225°F for a holding site before proceeding.

7.     Press the bread into the egg batter slice-by-slice, allowing excess egg batter to run back into the bowl.  Give it a good coating but do NOT drown it.  Place a bit of oil on the cooking surface to give it a good sheen and then place the Texas toast dipped in egg into it. 

8.     Cook until the first side is golden brown, then flip the bread over and repeat the process on the second side.  When both sides are golden brown, transfer them into a pan for holding in the oven until all are ready.  Repeat the process until you cook all of the bread then prepare to serve:

9.     Using individual platters, place four slices cut from TWO slices of Texas toast on each one.  Place two half-slices facing towards the right and two facing towards the left.  Dust each serving heavily with powdered sugar shaken from a shaker and then with a light dust of nutmeg.  Place an orange slice with a parsley sprig thrust through the center of each one on one end and a ramekin of whipped butter on the other side.  Accompany with meat and/or eggs of your choice and then, your French toast is now ready to serve.

10. There is not much that you can do with leftover French toast aside from wrapping cooked slices and then using them within 24 hours either as leftovers or as a foundation for desserts.  If not used within the day, toss them out but do not worry about wastage, this is a relatively low-cost dish.

This is a classic way of making French toast or a good base for an even more elaborate dish with fruit of one’s choice and/or whipped or sour cream.  Note: you can use the whipped butter formula we have presented for the previous four days PLUS the orange butter we have also presented you, too.  Furthermore, you can find almost everything we present you by using the convenient tags and links contained within our posts and on the sidebars.
