Bakersfield, CA, 12-10-2012 M:  Hello, friends, once again, here I am, ready to present to you a variety of material.  As you know, everyone else is long gone awaiting the end of the world in just eleven days in a variety of locations around the nation and the world.  I remain, however, with some of the staff just in case the blog and the world survive whatever happens on December 21, 2012 as it is our commitment to you to be here 24/7/365 no matter what takes place in the normal scheme of life.  I realize that many people are currently afraid that something indeed is going to take place on this fateful date whereas I remain skeptical and fortified with schnapps.   I have lived long enough that to know that no matter what comes down that the next life has to be so much better than this one that I have absolutely no fear or negative anticipation as we begin the final countdown to the End of Days, the End Times, the Apocalypse, or whatever else you wish to call it.   I guess what I am saying or attempting to say is that if something so enormous takes place, which destroys the world in a flash of blinding light, well, what the hell can I do about it or anyone else for that matter so why worry.  Isn’t that what Alfred E. Newman used to say, you know, the mascot or the emblem of the famed Mad Magazine?  “What? Me worry?”  Who can worry about something astronomical as the end of the world happening in just eleven days?  I might as well stay drunk for the next couple of weeks and then see where we emerge on the other side of this dastardly date! 

For the next couple of days, I have prepared an easy for your enjoyment and then after that, we will do what we do best, do the BEST OF in the form of a Christmas Menu for you Christians.  I am Jewish so it doesn’t mean a great deal to me but for those of you that put on big Yuletide family meals, if we survive the Twenty-First, you are going to need to fix dinner.  Therefore, that is what we will pursue once we have completed my essay on the dangers of Third World foods in the First World.

AMERICA—THIRD WORLD FOODSTUFFS IN A FIRST WORLD NATION—A RECIPE FOR DISASTER, PART I

America once supplied more than enough foodstuffs for its nation’s inhabitants as well as food for the world’s needy masses.  Now, however, our nation imports a growing proportion of our food supply from other countries[i], most notably those of our Third World Latin American neighbors who have difficulty in feeding their own citizenry.   The question that needs to be asked is how have we put ourselves into this situation in the first place and is it correct on a moral basis to buy food taken out of the mouths of others?  Moreover, to top that off, are we putting the health of our nation’s citizens at risk due to poor sanitation techniques if they exist at all and widespread abuses of pesticides banned here in the United States?  These are the questions for which, I shall provide the answers over the course of the next few days.

As a retired chef-educator with more than sixty years’ experience in the professional kitchens of the United States, I have handled a great deal of product over the years.  At first, when each season arrived, we rejoiced at the different fruits and vegetables that arrived at its coming and built our menus around these items.  Citrus and apples in the fall and winter months accompanied by squash of all types and varieties graced our menus and recipes.   Then, when spring arrived, we received all of the stone fruits (peaches, apricots, nectarines, plums, and cherries to name a few) as well as all varieties of berries, grapes, and miscellaneous fruits like persimmons and other assorted fruits.  All during the year, we rotated items in and out, with many of the university’s restaurants in which I worked and offered four distinct seasonal menus each year in accordance with the foodstuffs available to us at the time. 

My career began in 1949 at age 17 when I became a chef in the United States Navy.  I entered the post World War II military and spent the next twenty years in the service of my country before attaining my Masters and then my Doctorate and going to work for the state university system of California where I ran foodservice programs.  In those days, food imports may have been only in the 0.5-1 percent range because the great thing about living in California was that we grew practically everything we needed as well as the needs of most of the rest of the world. 

One of the great things about living in Kern County throughout most of my life was the fact that we WERE the breadbasket of the world but that was before the idiots in Sacramento, primarily the Democratic majority, stopped the water from coming down the valley.  That, however, is the basis of another essay.  Back to the point:  everything from dry root crops to orchards and vineyards, fields sprouting corn, lettuces, tomatoes, summer squashes, it was all there for our nation and the rest of the world to use. 

As time went by, however, more things became available to us.  This next paragraph will lay a basic fact on the table:

“Although food imports account for a relatively small share of the total U. S. diet, they play an important and growing role.  Imports accounted for 13-percent of the fresh fruit (excluding bananas), 8 percent of the fresh vegetables, 7 percent of the red meat and more than half of the fresh, frozen, and processed fish and shellfish available for consumption in the U. S. food supply during 1991 to 1995.  Imports have increased as a share of consumption for many major foods over the past 10 years with some of the largest percentage gains in frozen vegetables (1.8 to 7.8-percent), fresh melons (8.8-13.9-percent), other fresh non-citrus fruit, excluding bananas (9.0-15.9-percent), and rice (2.4-9.2-percent).[ii] 

We can lay the answer to the first question directly at the feet of the American consumer.  As a country, we no longer care for our fruits and vegetables on a seasonal basis but instead want our produce available to us all year-round.  In the past when produce was out of season, we as consumers would have to settle for canned or frozen replacements—which was fine—because they were good at our collective tables as is OR in our bakery products in restaurants and professional foodservice.  In fact, canned and eventually fresh frozen fruits (apples, peaches, cherries, apricots, pineapples, and berries) made delicious pies and pastries.  According to Linda Scott Kantor and Margaret Malanoski in their article, “Imports play a Growing Role in the American Diet”[iii]:

Increased consumption of imported foods is driven by many of the same factors underlying other changes in the American diet: rising household incomes, increased ethnic diversity of the population, and growing interest in diet and health.”

When NAFTA and GATT became a reality back in the late 1990s, they united our country economically with Canada to the north and Mexico to the south, creating in effect, the North American Union or NAU for short.  Products once raised here suddenly found themselves being cultivated or livestock-ranged elsewhere where it was cheaper and freer from U. S. government imposed sanctions, rules., and regulations that our country saw as important for the health and nutritional benefits of our citizens.   According to Tim Vanderpool from his article, “Food Fight rages over Labels on Imported Produce[iv]:

“According to the GAO, American produce consumption grew by 4.3 percent between 1980 and 1997.  During that same period, the amount of imported produce more than doubled coming mostly from Mexico, Canada, and Chile.  By contrast, market share for domestic growers increased by only one-third.”

Editor’s Note: this is where we will finish with Part I of our essay and pick up tomorrow with more of what I have.  I do hope that you find this to be a riveting, thought-provoking look at the problems face by the United States in our lack of intelligence in the importation of more and more of our food supply in the United States.  Believe me, if ever a recipe for disaster existed, this is it so please return tomorrow for Part II.
