Bakersfield, CA, 11-02-2012 F: We made it through HUMP DAY, which is always a feat in and of itself as when one sits in the CHEF’S Chair at the Elemental News of the Day for seven solid days; one loses sight of the end game.  I, however, bribe both Moses and Smokehouse to keep me supplied with not only Ouzo and Camel filterless cigarettes but also to keep in touch with what day it is so I don’t lose track of what’s going on. Otherwise, I will draw the second week, one of punishment, but hopefully never, like what happened to Gervais when he pulled four full weeks for making negative political comments that irritated Stinkbug.  I, on the other hand, try to keep things on the up and up so as NOT to find myself in trouble as missing three weeks of work would not be good.  What the reader doesn’t know is that we work about 10 days in advance at the office, then go home and send our finished blogs in.  If you look at the end of each blog, there is a date upon which the blog was written but to be on the safe side, we work ahead in case something goes wrong.  We just add our final comments to Moses who posts them at midnight each and every night so that you, the reader, have something to read when you have your breakfast OR come home from the midnight shift.  

We have our election coming up in four days and right now, it is understandable that there are all sorts of chaos going on and that no one has the time to read any of the blogs concerning foodservice online except for the apolitical.  Therefore, I believe that on Monday, Moses Scharbug III, our esteemed assistant editor is going to do a weeklong BEST OF so that nothing untoward is said regarding either political candidate.  It is important that we maintain a neutral political opinion here at the Elemental News of the Day because Stinkbug demands that no one makes a mistake that costs us this blog.  We have a great thing going with both Google and Amazon.com and to be shut down as the old blog at Choseit.com was by the federal government in 2010 would ruin everything.  I believe that Moses is going to share some good times that have taken place here at the END with our families and that all of you will enjoy whatever the program he puts together.  After that, we will do our Thanksgiving 2012 Menu for your enjoyment so all of you stick around; November is going to be exciting because if the Mayan Calendar does come to an end on December 21, 2012, we want it to go out in style!

Okay, let’s make our muffin recipe, like everything else, this one is for those involved in Institutional Cookery and Brian Carrick asks me to send it out to the girls at the Maui Medical Center, if they remember him from the 1990s!  Peaches in Hawaii are considered to be “exotic fruit” and that is why we decided to run this recipe today, we’ve done it before in a smaller size but have updated it to include the fabulous Torani’s syrups, something that makes everything in which they’re used BETTER!

(#046) PEACH-NUT MUFFINS—INSTITUTIONAL SIZE



If one works in quality foodservice establishments and not coffee shops, chain restaurants, and other low-class foodservice operations, one has access to far better products such as fresh summer fruits.  Peaches and nectarines, among others, make the best-baked goods, whether pies or quickbreads/muffins, when they are 100% fresh.  For those at home, they generally have access to these sorts of things either at the grocery store or in their backyards or in those of their neighbors so it makes a lot of sense to put these fabulous things to work!  This is a great muffin recipe, one everyone loves and if you make it during the cooler months, canned works fine, albeit with not quite the same flavor.  Anyhow, try them and experience something absolutely marvelous!

Yield:  12 medium (3/8-cup size) or 16 small (0.25-cup size) muffins / Mis-en-place: 45 minutes:

Method:

PAM Baking Spray: “the Chef’s Friend.”

1.     Mis-en-place: have everything ready with which to work.  Peel 2-3 medium-sized peaches and then remove the fruit from the pit and dice it fine—you need 1.5 cups of raw fruit to make the ONE cup of cooked fruit.  Place a small saucepot of water on the stove and bring it to a boil.  Add the fruit, keep there for 45-60 seconds, and then drain and reserve the liquid.  Plunge the poached peaches into a bowl of ice water for 2-3 minutes and then drain them and dry them.

2.     Preheat standard oven to 400°F or a convection oven—fan “on”—to 350°F.  Take a sheet with a dozen medium-sized baking cups and spray the insides and the tops of the pan with PAM or some such other food release spray.  Line them with paper baking cups, spray them with PAM, too, and set aside.

3.     Combine the first TEN ingredients together and DOUBLE-SIFT.  Stir in the whole-wheat flour, the cold, poached peaches, and the pecans; set aside.

4.     Using an electric mixer equipped with a whip attachment beat the egg with the two sugars until light and foamy and then cream in the vegetable oil and beat it until its light. 

5.     On reduced speed, blend in the vanilla extract, the buttermilk, peach syrup, and the sour cream.  Add one-quarter-cup of the reserved peach liquid, blending well.

6.     Fold the DRY into the WET using the least amount of strokes necessary to combine the two; the idea is that you don’t want to overmix, as overmixing is the reason why quickbreads and muffins are chewy.  Mix until combined and stop. Place the batter inside your refrigerator for 10 minutes.
Soy Flour: “not only is Soy Flour nutritious and increases the protein in any recipe in which, it is used but it also is a natural preservative in baked goods, thereby keeping them fresher longer than they normally would be.”
 
7.     Scoop the muffins cups right up to the tops with batter and then shake the pan to settle the batter.  Place the pan on the middle oven-rack and bake for 10 minutes; then lower heat by 25 degrees and continue baking for another 20-25 minutes or until a paring knife inserted into the center of each withdraws clean.

8.     Remove pan from oven and place on a wire rack to cool. After 2-3 minutes, shake the pan gently to loosen the muffins and then remove them and either continue cooling on the wire rack while you prepare the glaze.  Combine the three ingredients listed under “The Glaze” using your electric mixer and a whip attachment.  When it’s combined, drizzle it all over each muffin using the whip.  Glaze the muffins only once they've cooled enough that it doesn't run off them—you want it to affix itself to them. Now, they’re ready to serve accompanied by plenty of butter.
Plastic-Wrapped Muffins: this is a shot of Peanut Butter-Bran Muffins wrapped for the freezer and this is how yours should be wrapped, too, to protect them from the harsh frost.
 
9.     You can wrap each of them individually with plastic wrap and then place inside a Freezer Zip-Lock baggie and freeze until you need to use them.  Heat in a microwave oven until warm and then serve them. Be sure to keep them frozen rather than in the fridge as the fridge tends to dry breads out whereas the freezer keeps them in “suspended animation” for up to three months.

This is an enjoyable muffin recipe and a good way to utilize fruit that friends give you or that comes off an over-productive tree in your backyard.  Either way, no matter where the peaches come from, this is a good place to use them and everyone will love these muffins so expect a great deal of praise for your hard work.

          I am rather excited about what is happening in the next few days and also that my good friend and very underrated assistant editor, Moses Scharbug III, will be doing a weeklong best of series over the course of the election week.  You can bet that many people are going to be quite upset over the results one way or the other and it’s quite possible that you might see heightened bursts of anger, racism, violence, and fear taking place over the course of this election.  If any of you know the history of what took place in Europe in between the World Wars, then you know exactly what I am talking about, it’s nothing to long for, friends, something to be avoided at all costs.  The Unites States must remain the capitalist powerhouse beacon of freedom that it’s always been, nothing less, lest the free world descend into one thousand years of darkness and the apocalypse.  I know, this is a heavy subject for a culinary blog but that is what you get when you come to the Elemental News of the Day: CULINARY POLITICS!
