HUMP DAY!

Bakersfield, CA, 10-11-2012 Th: Hump Day is here and no, I did not forget it so the bookies in Las Vegas can take a breather.  I know that the co-authors around here have speculated that Chef Stinkbug would forget to mention it thereby earning himself a second week of work but I managed to remember it and that lets me off the hook this time around.   I got a card from Chef Gervais; he is doing well in Puerto Rico, having a grand old time while the rest of us are here in Bako or its environs.  Some are undoubtedly on vacation in other parts of the country and world but I am here as will be El Chilote next week, everybody’s favorite “amigo.”  We all love him for his ineluctable wit, while being a man of many words; he can also stun with the power of his mind as he breaks down the day’s happenings and converts them into language easily understandable by the rest of humanity.  I have known him most of my life and am proud that he writes for me here at the Elemental News of the Day and I hope that of all my co-authors, I never have to punish him for being outspoken.   People are stressing out over this upcoming election whereas I feel that what is meant to happen will happen and in the meantime, there is nothing that can be done except to VOTE.  Voting is the one inalienable right every American enjoys and no matter what anyone says, I personally believe that everyone should SHOW proof of identity at the polling station as not to do so invites fraudulent results.  I grew up in the 1960s, I saw what happened both in Vietnam and in Chicago in the year of 1968 and none of it was very pretty.  Sure, to some, that is ancient history but Santayana knew what he was talking about: “Those who forget the past are condemned to repeat it.”

Not wishing to get into a political discussion and make a hypocrite out of myself, elections are the fabric of America; they allow the common man to share the table with the wealthy. While in modern times, however, people with money have been able to buy office like the fool mayor of New York City, representative politics equalizes the population rather than allowing one single element of it to rule constantly.  Unfortunately, people tend to forget that nowadays what with all of this NINETY-NINE/ONE PERCENT CRAP, but I truly believe that what happens next month will be the voice of the American people saying “enough!”  It is indeed going to be a time of hope and change as people throw off the Hugo Chavez wannabes running the country now.  Please, I am not trying to incur that anyone is “Hugo Chavez,” only that there are some controlling the president who wish he was the irascible president of our South American neighbor.  Tell your representatives that if we need to show identification to get government services, then we need to show it to vote because I am not ready to turn the country over to the illegals milling around on the fringes of our borders and in cities.  Whatever happens, America must survive and we vote in less than a month!

(#0855) POMMES SAUTÉS IN DÉS—INSTITUTIONAL SIZE

Crisco Pan Release Spray: “the Chef’s Friend.”
 
This is a great French recipe from the halcyon days of Auguste Escoffier, great French chef of old.  These are the forerunners of Potatoes O’Brien, perfect for fine dining purposes or for a busy breakfast house. 

Yield:  50+ servings / Mis-en-place: 1-1.25 hours:


Parsley Knot: “always make sure you press as much excess green color out of fresh parsley as otherwise, it turns white sauces and cream soups “green,” an unprofessional and undesirable attribute.”

Master Chef Auguste Escoffier, 1846-1935, the "King of Chefs and Chef of Kings."

Method:
 

1.      Mis-en-place: have everything ready with which to work! Preheat a convection oven to 300°F with the fan in the “on” position.  You can use a standard oven set at 350°F but in this case, the convection works best as it circulates warm air around whatever it cooks. 

2.      Spray a large sheet pan with Crisco Pan Release spray, PAM, or some such other food release spray and then place the diced potatoes atop it.  Place them into the preheated convection oven and bake for 30 minutes; then, pull them out, place atop a cooling rack, and rest them for several minutes.

3.      Heat a large rondeau over medium-low flame.  Spray it with food release spray and then when fairly warm, add the clarified butter and heat it up.  As soon as it is close to sizzling, add the potatoes along with the remaining ingredients (except for the final one) and cook gently until done.

4.      Add the parsley flakes, stir gently to blend them, and then transfer them to sanitized hotel pans sprayed with food release spray.  Dish up to order as you serve them, keeping them warm at least at 145°F.  After two hours, dump them out and replenish them for sanitation and food safety issues.

5.      You can save leftovers but use them within one day.  Reheat them in a 350°F French Fryer and serve OR fry on a griddle as in Potatoes O’Brien and serve on breakfast but do not retain for longer than one day.

These are classic French sautéed potatoes, delicious, tasty, and perfect for many different presentations.

            Tomorrow, our weekend begins and I want you to know that we moving along at a rapid pace.  Our two-year anniversary falls on November 25, 2012 and then we steam along until we hit the dreaded date, December 21, 2012, the date the Mayan Calendar that ran for thousands of years comes to its mysterious end.  What is going to happen to the world when it arrives, will the planet be destroyed in some cosmic inferno, and will the Iranians and/or North Koreans do some crazy stuff leading us to Armageddon?  What is going to happen on that mysterious date?  No one knows and currently, I am debating as to whether or not I need be here or one of my comrades can take the helm and take us to God knows where?

I began my cooking career in the 1960's when I apprenticed underneath a great chef, Master Chef Ulysses S. Paz.  I have lived and worked in Hawaii, Washington State, Arizona, and California.  Even though I am in my late 60’s, I am still actively involved at a hotel here in Bakersfield, CA.
