Bakersfield, CA, 09-08-2012 S: We finally make it to the weekend, which is always good except that Moses Scharbug, our tireless editorial genius informs me that tomorrow, I know whether or not I am doing another—or more—week(s) for saying what I said regarding politics.   Well, that is okay, I resign myself to my fate. When all is said and done, if a man lacks courage to speak up, then so be it, let him be punished by those intent on punishing him whereas I prefer being punished because I have the courage to say what must be said: Obama must go in November or the country is lost!  There, I said it, it is the truth and everyone out there knows it so what more can happen to me? Two or three weeks more, write for an entire month—I like writing for you after all and this is an easy topic to do plus it is new and by the time I finish, it is going to be as numerous in its entries as any of our other topics, more so than some!

Today, I present to you the BEST Hawaiian Vinaigrette on the planet, one you likely have seen before on these pages only this time in an institutional form so restaurant owners and foodservice operators don’t have to trouble themselves with minute amounts when they can make large quantities, enough for 7-10 days.  That is what foodservice is all about: making things easy by making larger batches than folks at home make and the good thing is, you can either increase or decrease quantities to fit your specific needs.  We start now:

(#458) HAWAIIAN VINAIGRETTE

Back in the 1990s, I created the wonderful Hawaiian Vinaigrette that is better than anything else around is.  Use it for your best tropical salads and you never will go wrong. 

Yield:  3.5 gallons / Mis-en-place: 25-30 minutes:

Method:

1.      Mis-en-place: have everything ready with which to work! With the aid of an electric mixer equipped with a whip attachment, blend the first THREE ingredients together. 


2.      Next, begin dribbling in the peanut oil along the sides of the bowl all the while rotating the whip at medium-high speed.  This is a semi-emulsified dressing so it will separate during storage but should—for best purposes—be whipped in a blender prior to use to return the airy volume to it.

3.      It takes time to add the oil so do not rush it.  Then when you finish blending the dressing, add the garlic, sesame oil, and minced macadamia nuts.  Transfer to a sanitized airtight five-gallon container equipped with a tight-fitting lid, label as to contents, date, and refrigerate.  Keep at or below 45°F at all times.

4.      As mentioned, prior to use, place desired amount in a blender and give it a good frappe.  Never return used product to the parent product and keep for no longer than 5-7 days in storage.  Use it or lose it within that time.

This excellent Hawaiian-style vinaigrette reeks of flavor and improves the taste of whatever salad to which you add it.

             Tomorrow is my “doomsday” of sorts but you know what: if the world does indeed come to an end in December due to the Mayan calendar coming to its inevitable end, well, I will be the one the most blog posts this year so when I go into infinity, I can be proud of my accomplishments!  Again, I am saying this with a smile on my face, I do not believe for one second that our time is up on this planet but then neither did the dinosaurs, and they thought they would live forever, no doubt!  To conclude things, please go buy the Santana album, “Amigos,” the one advertised today as to me, it is the best of the best of the first ten years of the group AFTER the first three.  It is excellent, exciting, and danceable so go buy it now!

I was among the chefs who worked the dinner and it was there that I met Stinkbug, my good friend. We later worked together in Washington State in the Puget Sound area, primarily Mukilteo. I began my career in 1972 in Culver City, California but presently make my home in Frazier Park, California.
