Bakersfield, CA, 06-26-2011 Su: It’s my turn today to offer a recipe and I have decided to continue on with our Classic Quickbreads and Muffins Series, by offering Pt. XVIII.  The muffin I am presenting is similar to yesterdays but is different in some of its ingredients. I think you will find this one to be both tasty and beneficial to one’s health.  Nowadays, one of the big problems is getting enough fiber as if one doesn’t have enough, their bodies are not as healthy as they should and can be. We feel that if one eats one of these muffins for breakfast and goes out to face his or her day afterward, they will have the energy and the excitement with which to have a very successful day.  You can find the ingredients in most grocery or health food stores so get out the phone book and search out those who have the items you need and go get them!  Anyhow, let’s get started!  

MULTI-BRAN, DATE, AND CARROT MUFFINS

Method:

1.      Preheat standard oven to 400°F or a convection oven to 375°F.  Spray 12 medium-sized baking cups with PAM or some such other food release spray and then line with paper baking cups. Spray the cups and the tops of the muffin pans with PAM, too, and set aside.

2.      Double-sift the DRY ingredients together and then stir in the cereal, dates, and carrots.

3.      Combine the wheat and rice brans in the bowl of an electric mixer and add the boiling water.  Mix on low speed for one minute until combined and then allow to sit for a couple of minutes; then, begin adding the rest of the ingredients one-by-one, mixing well after each addition, and then fold the DRY into the WET using the least amount of strokes necessary in order to combine the two together.

4.      When the batter’s formed, cover with plastic wrap and place inside your refrigerator for 30 minutes.  Then, remove and scoop batter into the prepared cups up to and over the rims if necessary until all of the batter’s been used up. Shake the pan gently to settle the batter and then place inside your preheated oven to bake on the middle oven rack.

5.      After 10 minutes have passed, reduce heat to 375°F (350°F for the convection oven) and continue baking for another 20-25 minutes OR until a paring knife inserted into the center of the middle muffins on the rack withdraws clean.  At that point, remove them from the oven and place the pan on a wire rack to cool.  Cool for 3-4 minutes and then de-pan the muffins and either finish cooling or serve while still hot. If desired, dust with powdered sugar for a nice effect.

6.      To save for later, when totally cool, wrap each muffin in plastic wrap and then place inside freezer Zip-Loc bags and freeze.  Baked goods do better frozen than kept in the refrigerator.  In the fridge, they tend to dry out.  Muffins can be pulled out a day in advance and allowed to defrost in the refrigerator or heated up in the microwave oven for immediate use.

These muffins are extremely health-minded, nutritious delights and this recipe will keep your family supplied with wonderful snacks.  This is a recipe you should keep on hand in your recipe books so you can make it whenever you need something good with which to please the family!
