CLASSIC QUICKBREADS AND MUFFINS, PT XVI

ABC MUFFINS

Bakersfield, CA, 06-04-2011 S:  Hello, friends, I’m back today to share with you a wonderful muffin recipe that you will find tasty and fun to make: “ABC Muffins” or “Apple-Banana-Coconut Muffins.” This is one you will definitely use time and time again. Let’s get started!

APPLE-BANANA-COCONUT MUFFINS

1. For about 12-medium-size muffins:

Qty.
Measure
Item
Other
1.5
Cups
All-purpose flour

2
Teaspoons
Baking soda

1.5
Teaspoons
Baking powder

2
Tablespoons
Powdered milk

.5
Teaspoon
Kosher salt

.5
Teaspoon
Ground coriander

1
Cup
Bran flakes cereal

.5
Cup
Shredded coconut

1
Cup
Minced apple

.5
Cup
Wheat bran

.5
Cup
Boiling water

.75
Cup
Splenda

3
Tablespoons
Vegetable oil

2
Large
Eggs

1.5
Cups
Mashed bananas

1
Cup
Milk or fruit juice

.125
Cup
Red raspberry preserves

1.5
Teaspoons
Vanilla extract

Method:

1.      Preheat standard oven to 400°F and spray a muffin pan with PAM, both cups and top of the pan. Line with paper liners and spray those with PAM, too, so your muffins will easily peel away from the paper.

2.      Combine the first nine ingredients together in a bowl and set aside.

3.      Next, place the wheat bran in the bowl of your electric mixer and add the boiling water and blend.  Then, add the remaining ingredients one-by-one and blend well after each addition.

4.      Fold the dry ingredients into the wet ingredients and mix to combine. Place the muffin batter inside your refrigerator for 15 minutes; then, remove and scoop the batter into the cups until they’re full, even somewhat over the tops.  Shake the pan gently to settle the batter and then place inside your preheated oven to bake on the middle oven rack.

5.      After 10 minutes have passed, reduce heat to 375°F and continue baking for another 20-25 minutes OR until a paring knife inserted into the center of the middle muffins on the rack withdraws clean.  At that point, remove them from the oven and place the pan on a wire rack to cool.  Cool for 3-4 minutes and then de-pan the muffins and either finish cooling or serve while still hot. If desired, dust with powdered sugar for a nice effect.

6.      To save for later, when totally cool, wrap each muffin in plastic wrap and then place inside freezer Zip-Loc bags and freeze.  Baked goods do better frozen than kept in the refrigerator.  In the fridge, they tend to dry out.  Muffins can be pulled out a day in advance and allowed to defrost in the refrigerator or heated up in the microwave oven for immediate use.

These are easy muffins to make and joy to eat so don’t be afraid to jump right in and get busy in the kitchen! Also, please note that these muffins are extremely nutritious and provide calcium, iron, magnesium, potassium, zinc, and sodium.

Thank you friends for the lovely day today and I do hope that you will find this recipe to be useful.  There is nothing better than apples, bananas, and sweet coconut combined together in a tasty muffin.  You and your friends, family, and neighbors will come to love this recipe!

Thank you!
